Ingredients:

  • 2–3 lbs of mixed grass-fed beef bones (knuckle bones, marrow bones, oxtail, and joints are ideal)

  • 1–2 lbs of chicken backs or feet (for added gelatin = glycine source)

  • 2 tbsp apple cider vinegar (helps draw minerals and amino acids from the bones)

  • 1 onion, quartered

  • 2–3 cloves garlic, smashed

  • 2 stalks celery, chopped

  • 2 carrots, chopped

  • 1 handful of parsley (add during last 30 minutes)

  • 1 tsp sea salt (or to taste)

  • 12–14 cups of filtered water

Optional Boosters (for extra glycine/glutamine):

  • 1–2 tbsp gelatin powder (e.g. grass-fed bovine gelatin)

  • 1 tbsp dried seaweed (minerals + gut support)

  • 1 tsp turmeric (anti-inflammatory)

  • 1 bay leaf, 1 tsp peppercorns (flavor + mild digestion support

Instructions:

  1. Roast bones (optional but adds flavor):
    Preheat oven to 400°F. Spread beef bones on a baking sheet and roast for 30 minutes, turning once. This deepens the flavor.

  2. Simmer:
    Place roasted bones, chicken parts, and vegetables in a large stock pot or slow cooker. Add water and vinegar. Let sit 30 minutes before heating (to draw minerals).

  3. Bring to boil, then reduce to a simmer.
    Skim off foam/scum that rises in the first hour.

  4. Slow cook for 12–24 hours.
    The longer the cook, the richer the collagen (glycine) and glutamine. Use a pressure cooker (e.g. Instant Pot) for 3–4 hours if short on time.

  5. Add parsley and gelatin (if using) in the last 30 minutes.

  6. Strain into glass containers and cool.

  7. Store in fridge up to 5 days or freeze up to 3 months. The broth should gel when chilled — a sign of high gelatin content.
